I’m excited to share an easy and delicious recipe for Salmon Parsley Patties. Living in Boise, Idaho, fresh seafood can be limited; while river fish are available, they’re not the same as ocean-caught varieties. Often I rely on frozen or canned fish, which are convenient and tasty, but I still miss fresh dorado, halibut, shrimp, and tilapia.
I’ll be returning to Ecuador in September with my husband, and this time we’ll definitely visit the coast. Preston hasn’t been to the coast yet — he’s mostly seen the Sierra (the Andes) — so I’m looking forward to showing him a different side of Ecuador. I plan to enjoy plenty of fresh seafood while there and document the meals so you can follow along. It will be a feast, and I can’t wait.
Back in Boise, I still crave fish occasionally, so I make fish-based dishes when the mood strikes. Today I had time to cook, so I picked up some good ingredients, tied my hair back, turned on some music, and got to work. These Salmon Parsley Patties are quick to prepare and make a great last-minute lunch or dinner.
Salmon Parsley Patties

Description
These Salmon Parsley Patties are a simple, flavorful lunch or light dinner. Serve them with your favorite condiments or a side salad for a satisfying meal.
Ingredients
- 3 6-oz cans salmon
- 1/2 cup Italian parsley, finely chopped
- 1/2 purple onion, finely chopped
- 1/3 cup almond flour
- 1/4 tsp black pepper
- 1 tsp salt
- 3 eggs, whisked
- 3 tbsp coconut oil
Instructions
- In a bowl, combine the whisked eggs and drained salmon, flaking the salmon as needed.
- In a separate bowl, mix the chopped parsley, chopped purple onion, salt, pepper, and almond flour. Add this mixture to the bowl with the salmon and eggs, stirring until evenly combined. Form into two patties.
- Heat a skillet over medium heat and add the coconut oil. Fry the patties about 4 minutes per side, until golden and crispy. Serve immediately with your favorite condiments and sides.
