Ingredients
- 2 tablespoons olive oil
- 3 tablespoons butter
- 2 leeks, white/pale green part only, cut into 1/2 inch pieces
- 1 large head cauliflower, chopped
- 1 tbsp minced garlic
- 8 cups chicken broth
- 1 cup heavy cream
- Salt and freshly ground black pepper, to taste

Instructions
- Set the Instant Pot to the “Sauté” setting. Heat the olive oil and butter, then add the leeks, cauliflower and minced garlic. Sauté for about 10 minutes, stirring occasionally, until the leeks are softened and fragrant.
- Add the chicken broth and stir to combine, scraping up any browned bits from the bottom.
- Secure the lid and set the valve to seal. Select the “Soup” function and program for 30 minutes.
- When the cooking cycle finishes, either perform a manual release following your Instant Pot manual (cover the steam spout carefully and release steam) or allow a natural release according to the manufacturer’s instructions.
- Carefully remove the lid. Use an immersion blender to purée the soup until smooth. Alternatively, transfer in batches to a countertop blender and blend until velvety.
