  • Few dashes sea salt
  • 1 large egg
  • 1 Tablespoon olive oil (or other oil you enjoy)
  • 2 Tablespoons water
  • ½ teaspoon apple cider vinegar (or lemon juice)

Instructions

  1. Heat a non-stick skillet (about 10 inches) over medium heat.
  2. Whisk all ingredients together until the batter is smooth and lump-free.
  3. Add a little coconut oil, butter, or olive oil to the warm pan and swirl to coat the surface.
  4. Pour the batter into the pan, forming a single large pancake-shaped flatbread.
  5. Cook for 2–3 minutes, until edges set and you can slide a spatula underneath without breaking it.
  6. Flip the flatbread carefully and cook the other side for 1–2 minutes until lightly browned and cooked through.
