Chewy Baked Oatmeal with Mixed Berries and Maple Drizzle

I like to change up breakfast so we don’t get bored with the same routine. Plain oatmeal is great, but this baked version lifts it to the next level. A blend of cinnamon, nutmeg and a hint of cloves turns ordinary oats into something the kids ask for again and again.

We first discovered a version of this at Good Earth café in Holland and loved it so much I experimented until I had a version that suited our tastes. Simple and wholesome, this baked oatmeal comes together quickly and keeps well, so it’s ideal for busy mornings.

WHAT ARE THE INGREDIENTS FOR YUMMY BAKED OATMEAL?

  • 2 cups rolled or old-fashioned oats
  • 1/2 cup dark brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • A pinch or two of ground cloves (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 1/4 cup (half a stick) butter, melted
  • 1 teaspoon vanilla extract
  • Milk, for pouring

HOW DO YOU MAKE YUMMY BAKED OATMEAL?

Preheat the oven to 350°F (180°C). Combine all the ingredients in a bowl and mix until evenly incorporated. Pour the mixture into a greased 9-inch square baking dish and bake for about 30 minutes, or until the top is golden and set.

Remove from the oven and let it rest a few minutes before serving—three minutes is usually all it takes for our family to start digging in. Serve warm with a splash of milk and add-ins like raisins, dried fruit, or a dollop of crunchy peanut butter. Raisins work especially well, but in summer we love it topped with fresh berries—strawberries, blueberries or blackberries all pair nicely.

For a lighter touch, serve with fresh fruit and a drizzle of honey or maple syrup. The baked oatmeal also stores well—refrigerate leftovers, then reheat a portion with a little milk for a quick breakfast.
