1 – Prepare the pears and add to a saucepan:
Peel the pears and halve them. Use a small, sharp knife to remove the core and the stringy fibres that run from the stem to the centre. Trim the calyx—the woody part at the base. Cut the halves into even chunks about 3 cm (1 inch) and place them in a non-reactive saucepan with the remaining ingredients. Stir to combine.

2 – Stew until tender:

  • 3 large pears – prepared weight about 650 g (1.5 lb) after peeling and coring
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
