Ingredients

  • 2 chicken breasts, butterflied
  • 2 tablespoons olive oil, divided
  • 1 cup thinly sliced yellow onion (about 1 onion)
  • 8 oz white button mushrooms, halved
  • 2 tablespoons dry white wine
  • 9 ounces dairy-free cream cheese or sour cream alternative
  • 1 tablespoon Dijon mustard
  • 1 teaspoon whole-grain mustard
  • 1 clove garlic, minced (about 1/2 tsp)
  • 1 tsp dried parsley
  • 1 1/2 tsp salt, plus additional salt and pepper to taste

Instructions

  1. Butterfly the chicken breasts, season both sides with salt and pepper, and set aside.
