Easy Slow Cooker Chicken Casserole – No chopping, no frying. Simply place all the ingredients in the slow cooker and let it do its work. This is one of the easiest casserole recipes you’ll ever make.

Slow cooker season is back. I pulled mine from the back of the cupboard and it will likely stay on the counter for the coming months. If you haven’t embraced slow cooking yet, here’s why I love it.
Benefits of Slow Cookers:
1. They’re affordable to buy and cheap to run. You can find basic models for a low price that still last for years. More advanced models with timers are also available if you need to set the cooker to finish before you get home.
2. Slow cookers are ideal for busy families. Toss the ingredients in the pot in the morning, head out for the day and return to a hot, ready meal with no fuss.
3. They’re perfect for cooking cheaper cuts of meat. Slow cooking breaks down tougher cuts of beef, lamb and other meats, delivering deep flavour at a lower cost. Ask your butcher for recommendations — they often carry cuts you won’t find in supermarkets.
4. Slow cooking can be a healthier method since you don’t need to fry ingredients. You can often skip added oil or butter and still get a rich, satisfying result.

A Really Easy Dinner Recipe
Some slow cooker recipes ask you to brown the meat first, but I prefer to keep things as quick and simple as possible—especially when preparing in the morning. This is a no-fry recipe. If you prefer, you can quickly brown the chicken in a pan before adding it, but it’s not necessary.
This is also a no-chop recipe. I use convenient ingredients like frozen onions and baby carrots so there’s minimal prep—no peeling or precise chopping required.

It takes only a few minutes to wash the vegetables and add everything to the slow cooker. I usually add the mushrooms later because they cook faster than root vegetables, but you can add them at the start if you prefer.
You can cook this casserole on high or low—see the cook times listed in the recipe card below. When it’s ready, serve with steamed greens like broccoli or kale for a comforting family meal.
This is classic comfort food at its best and makes a great meal to come home to.

Recipe Substitutions:
Chicken – I use chicken thighs because they stay moist and have more flavour in a casserole. You can use boneless, skinless chicken breasts if preferred; they may break down more during long cooking, so consider leaving them whole rather than diced.
Veggies – Any root vegetables work well: parsnip, turnip, swede or chunks of butternut squash make great alternatives. If you add quicker-cooking vegetables like broccoli or green beans, add them at the same time as the mushrooms.
Gluten-Free – To make the recipe gluten-free, use certified gluten-free stock and gravy granules.

Ingredients
- 500g / 17.5oz skinless chicken thighs
- 500g / 17.5oz baby potatoes
- 250g / 8.75oz baby carrots
- 50g / 1.75oz frozen onions
- 2 crushed garlic cloves
- 250ml / 1 cup hot chicken stock
- 1 tbsp tomato purée
- 2 tbsp gravy granules
- 1 tsp Dijon mustard
- 250g / 5 cups mushrooms
Instructions
- Wash the potatoes, carrots and mushrooms well. No need to peel them.
- Add all ingredients except the mushrooms to the slow cooker and stir to combine.
- Cook on low for 6 hours or high for 3 hours.
- About halfway through cooking, add the mushrooms.
- Serve with steamed greens such as broccoli or kale.
Notes
The casserole freezes well for up to two months. To reheat, thaw overnight in the fridge and heat gently in a saucepan until piping hot.
