I used a box of yellow cake mix for the cupcakes and a homemade buttercream for the frosting. If you prefer not to make buttercream from scratch, you can use store-bought frosting — but for a lighter, more pipeable texture, whip the canned frosting with a handheld mixer before decorating. It makes a big difference in consistency and appearance.

Flag Cupcake Cake
Yields: 24 cupcakes

  • 1 box cake mix plus ingredients called for on the box (to make 24 cupcakes)
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 6 cups powdered sugar (add more if needed for consistency)
  • 1/2 cup heavy whipping cream
  • 2 teaspoons pure vanilla extract

Preheat and prepare cupcake batter according to the package directions. Divide batter among cupcake liners and bake as directed. Allow cupcakes to cool completely on a wire rack before frosting.

To make the buttercream: in the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), beat the room-temperature butter on medium speed until smooth and creamy, about 2 to 3 minutes. With the mixer on low, gradually add the powdered sugar, then add the whipping cream and vanilla. Increase speed and beat until the frosting is light and fluffy. If the frosting is too thin, add a little more powdered sugar until you reach a pipeable consistency; if it’s too stiff, add a teaspoon of cream at a time.

Divide the buttercream into three portions. Color one third with gel food coloring to a deep blue, another third to a bright red, and leave the remaining third white. Fit piping bags with round tips for smooth dollops or star tips for textured swirls.

Pipe white frosting on nine cupcakes, red frosting on nine cupcakes, and blue frosting on six cupcakes. Arrange the cupcakes on a large serving board or platter in a rectangular flag pattern: place the six blue cupcakes together in the upper left corner to form the canton, then position the red and white cupcakes in alternating rows to create the stripes. Adjust spacing so the arrangement reads clearly as a flag.
