Ingredients

  • 500 g chicken mince
  • 100 g gluten free breadcrumbs
  • 1 tbsp Cajun spices
  • 1 tsp garlic paste
  • 1 tbsp mayonnaise, or vegan mayo

Instructions

  • Add the chicken mince, gluten-free breadcrumbs, Cajun spices, garlic paste, mayonnaise and chopped parsley to a large mixing bowl.
  • Using your hands, mix the ingredients until evenly combined.
  • Divide the mixture into six portions, roll each into a ball and press gently to form patties. Make a small dent in the centre of each patty with your thumb. If preparing ahead, chill the patties on a tray in the fridge.
  • Heat a little oil in a pan or griddle. When hot, cook the patties for 3–4 minutes per side until cooked through (internal temperature above 74°C / 165°F). Remove, rest for a couple of minutes and serve.
