With these low carb croutons I don’t have to miss out — can we get a YAY!
I go through phases where I crave croutons, and other times I don’t. These low carb croutons, however, make me reach for them more often. They add a pleasant crunch to salads and make a simple meal feel more satisfying.
I made these croutons using a batch of my simple soda bread with 2 tablespoons of Italian seasoning mixed into the dough before baking. The loaf turned out a bit too herby for my taste, so turning it into croutons was the perfect solution to avoid wasting it.
My friend Brenda from Texas Brew Salsa told me she had made crunchy croutons from my Basic Low Carb Yeast Bread and loved how they turned out.

Either bread recipe (yeast bread or soda bread) works well for these croutons, and they are easy to make and store. You can simply cube a few slices and toast them, but I prefer baking a whole loaf so we have croutons on hand for several meals.
Brenda baked her bread in a larger sheet pan, so all she needed to do was cube and toast it — super simple!
- 1 loaf Low Carb Yeast Bread (or the simple soda bread)
- Coconut oil spray
- When preparing the bread, add 1 tablespoon Italian seasoning to the dough for a herb-infused flavor.
- Preheat the oven to 250°F (about 120°C).
- Cut the cooled bread into bite-size cubes, roughly 1/4 to 1/2 inch in diameter. Arrange the cubes on a baking sheet lined with parchment paper and lightly sprayed with coconut oil.
- Bake at 250°F for about 2 hours, stirring the bread cubes once or twice during baking to ensure even drying and crisping.
- Let the croutons cool completely, then store in an airtight container. You can freeze a portion to extend their shelf life since there are no preservatives.
These are the baking sheets I use almost daily in various sizes — they distribute heat evenly and one sheet is perfect for a batch of low carb croutons.
