One-Skillet Taco Skallowder: Quick Mexican-Style Skillet Dinner

This easy taco skillet recipe is a perfect weeknight dinner—ready in under 20 minutes and compatible with the 21 Day Fix. It’s also a ZERO point WW option when prepared with very lean turkey.

Sometimes weeknights veer off plan and you need a fast, satisfying meal. That happened to me the day I made this turkey taco skillet: a slow-cooker dinner never made it into the crock pot, so I pulled pantry and freezer staples together with ground turkey and cooked everything in one skillet. The result was flavorful, filling, and on the table in minutes.

Even my toddler couldn’t get enough.

Ingredients for this Easy Taco Recipe

Below are the ingredients I used. This recipe is highly adaptable—swap proteins, adjust vegetables, or use whatever you have on hand.

  • 1 onion, diced
  • 1 large green bell pepper, diced (or 2 small)
  • 1 pound ground turkey (or chicken or beef)
  • 14 oz canned petite diced tomatoes with jalapeños
  • 1 cup black beans (drained/rinsed)
  • 1 cup frozen corn
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • salt to taste

Toppings

I topped mine with:

  • Greek yogurt
  • Avocado
  • Cheddar cheese

Other delicious options:

  • Pico de Gallo or salsa
  • Guacamole
  • Crushed tortilla chips
  • Green onion or cilantro
  • Fresh lime
  • Radishes
  • Shredded lettuce
  • Pickled vegetables

Ingredients

  • 1 onion, diced
  • 1 large green bell pepper, diced (or 2 small)
  • 1 pound ground turkey (or chicken or beef)
  • 14 oz petite diced tomatoes with jalapeños (1 can)
  • 1 cup black beans
  • 1 cup frozen corn
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Optional toppings: Greek yogurt, avocado, shredded cheese

Instructions

  • Spray a large skillet with cooking spray and sauté the diced onion and bell pepper over medium heat until softened.
  • Add the ground turkey and cook until no pink remains, breaking it up with a spoon.
  • Stir in the can of petite diced tomatoes with jalapeños, black beans, and frozen corn.
  • Season with chili powder, cumin, garlic powder, and salt. Mix well.
  • Cook until everything is heated through and the tomato juices reduce slightly, about a few minutes.
  • Divide into four portions and serve as is, over rice, or with your favorite toppings. Remember to account for any added toppings in your meal plan.

WW: Zero points when made with 99% fat-free ground turkey; toppings may add points.
