Make a very grownup treat with this Rum Java Float. Coffee, rum and orgeat syrup make a delicious adult beverage!

I promised a new cocktail and here it is: the Rum Java Float. It’s a fun, slightly whimsical choice for Father’s Day (or any day you want a grownup treat). Sugar Island Rum suggested the pairing and it turned out to be a perfect, simple combination of coffee, rum and a hint of almond from orgeat.
In short: it’s yummy. This isn’t meant to be the most refined cocktail you’ll ever taste — it’s exactly what it should be: cold, sweet and balanced. The coffee and rum cut through the sweetness of the float, creating a pleasant, layered drink. After years of enjoying Irish Coffee, I should have tried coffee with rum in a float like this sooner.

Orgeat syrup is the one ingredient you might not already have behind the bar. It’s made from almonds, sugar and orange flower water and contributes a subtle almond note that rounds the drink. If you don’t want to buy a whole bottle — since homemade orgeat benefits from a couple weeks to meld — you can substitute an equal amount of Amaretto or a few drops of almond extract. The cocktail still works without it; the rum and coffee are the star flavors.

Sugar Island Spiced Rum added a pleasant sweetness to this version of the float. Spiced rums often carry vanilla and warming notes that can seem assertive on their own, but here they blend smoothly with coffee and ice cream. If you prefer a more neutral profile, use a dark rum you like — the cocktail will still be enjoyable. For an ultra-easy mixer, spiced rum also works well with cola when you want a no-fuss drink.

Ingredients
- 4 ounces dark rum
- 5 ounces coffee chilled
- 1 ounce orgeat syrup see notes
- ½ cup vanilla ice cream
- 2 ounces sparkling water chilled
- 1 maraschino cherry optional
Instructions

Combine the rum, chilled coffee and orgeat syrup in a cocktail shaker with ice. Shake until very cold. Divide the mixture, including the ice, between two glasses.

Top each glass with a scoop of vanilla ice cream, add a splash of sparkling water, gently stir to combine, garnish with a maraschino cherry if desired, and serve.
