Savory Lamb and Lentil Meatballs with Zesty Lemon Rice

Some dinners require three pots, two pans, and a sink full of dishes. This one doesn’t. These lentil meatballs roast on top of lemon-scented rice while a quick mint pesto comes together in the blender. The result is a flavorful, one-pan meal that feels elevated but is surprisingly simple to prepare.

I’m a big fan of lentils for their texture, nutrition, and ability to take on bold flavors. This version stretches ground meat with cooked lentils, infusing warm spices into the meatballs while they roast over rice. As the meat cooks, its juices drip down and season every grain, giving the rice a rich, savory depth that pairs beautifully with a bright mint pesto on top.

This technique—stretching meat with legumes and cooking grains with meat juices—is common across many Mediterranean and Middle Eastern home kitchens. It saves time, reduces dishes, and concentrates flavor in the rice.

The warm notes of cumin and turmeric in the meatballs complement the bright lemon in the rice. A spoonful of mint pesto at the end lifts the whole dish, adding freshness and a hint of sweetness from raisins that balances the savory meat.

Tip From Kevin

Pre-cooked

You can use 1 cup of lentils from a 15-ounce can (reserve the rest for another use) or a vacuum-packed cooked/steamed lentil pouch commonly found in the produce or refrigerated vegetarian section. Either option makes forming meatballs quick and easy. If using a packaged steamed lentil product, follow package weight recommendations and drain if needed.

Ingredient Notes and Substitutions

(See the recipe card for the full ingredient list and quantities)

  • Ground Lamb or Beef: Lamb delivers a richer, traditional flavor; lean ground beef or an 80/20 beef mix is a good substitute and keeps the meatballs moist.
  • Cooked Lentils: Add texture and help bind the meatballs. Drain canned lentils thoroughly before mixing to avoid excess moisture.
  • Warm Spices: Ground cumin and turmeric lend earthy, aromatic notes. Red pepper flakes give a gentle heat—use to taste.
  • Jasmine or Basmati Rice: Jasmine cooks fluffy and absorbs flavors well; basmati is a fine alternative that gives a slightly nuttier aroma.
  • Lemon Zest: Adds citrus brightness without making the rice acidic. Use zest rather than juice for a lighter, aromatic lift.
  • Fresh Herbs: Mint and flat-leaf parsley form the base of the pesto. They keep the sauce vibrant and fragrant.
  • Golden Raisins: Offer a subtle sweetness that balances garlic and herbs. Regular raisins are an acceptable swap.

How to Make Lentil Meatballs

  1. Preheat the oven. Set the oven to 400°F (about 200°C).
  2. Make the meatball mix. Drain and rinse the lentils. Combine them with ground lamb or beef, salt, ground cumin, turmeric, and a pinch of red pepper flakes. Mix gently so the lentils stay intact. Form into eight large meatballs.
  3. Roast until browned. Grease a 9×13-inch baking dish with a tablespoon of olive oil. Arrange the meatballs with space between them and roast uncovered for about 20 minutes until they start to brown.
  4. Add the lemon rice. Stir together 2 cups of water, lemon zest, and a little turmeric. Scatter 1 cup of rice around the meatballs, pour the liquid over the rice, cover tightly with foil, and bake until the rice is tender, about 40 minutes.
  5. Blend the mint pesto. While the rice cooks, puree mint leaves, parsley, garlic, golden raisins, olive oil, and salt in a blender or with an immersion blender until smooth.
  6. Finish and serve. Remove the foil, fluff the rice with a fork, and serve with two meatballs per plate. Spoon the mint pesto over the meatballs and rice to taste.

Recommended Tools

  • 9×13-inch Baking Dish: Fits meatballs and rice so everything cooks together.
  • Ice Cream Scoop or Large Cookie Scoop: Helps portion even meatballs quickly.
  • Blender or Immersion Blender: For a smooth, bright mint pesto.

Serving Suggestions

This one-pan meal is satisfying on its own, but you can add light sides to round it out:

  • A simple tabouli-style salad brings bright acidity and herbs to complement the rich meat.
  • Creamy yogurt sauces or a tahini-yogurt dip cool the palate and pair nicely with the spices.
  • Warm pita or flatbread is perfect for scooping up rice, meatballs, and any extra pesto.

Frequently Asked Questions

Why is my rice still firm after baking?

Make sure the baking dish is covered tightly with foil so the rice can steam. If the foil isn’t sealed well, moisture escapes and the rice won’t cook through. Check the seal and bake until the grains are tender.

Why are my lentil meatballs falling apart?

This often happens when the lentils are too wet or the mixture hasn’t been mixed enough to bind. Drain canned lentils thoroughly and mix gently until the meat and lentils are evenly combined. Chilling the mixture 15–20 minutes before shaping can help it hold together.

Can I prepare the meatballs and rice in separate dishes?

You can, but cooking them together concentrates flavor as meat juices infuse the rice. If you choose to cook separately, consider spooning pan juices over the rice to capture some of that depth.
