Whole30 Sausage Patties Without Eggs — Simple Paleo Breakfast

We started a Whole30 Facebook group filled with fantastic people (you’re welcome to join), and one question we often see is, “What if I can’t do eggs?” An egg-free Whole30 cycle can be challenging, so we developed a protein-packed, egg-free breakfast: Whole30 Sausage Patties. They’re great for a quick morning meal or a grab-and-go snack. Make a batch ahead, freeze them, and pull out a few the night before.

This year I’m doing Whole30 while pregnant and CrossFitting five days a week, so I include starchy, compliant carbohydrates to keep my energy up.

  • 2 T ghee or other cooking fat of your choice
  • 1/2 cup onion, diced
  • 1.5 t minced garlic
  • 1 cup fresh spinach
  • 1/2 cup shredded carrots
  • 1 cooked sweet potato, mashed
  • 1 pound ground pork
  • 1/2 t dried sage
  • 1/4 t Himalayan salt (or salt of choice)
  • 1/4 t black pepper

Directions:

1. Preheat the oven to 350°F (175°C).

2. Heat 1 tablespoon of ghee in a skillet over medium heat. Add the diced onion, minced garlic, and shredded carrots. Cook until the onion is translucent and the carrots begin to soften.

3. Add the cooked sweet potato and the cup of spinach to the skillet. Mash the sweet potato into the vegetables and stir until the spinach wilts. Remove from heat and let the mixture cool slightly.

4. In a mixing bowl, combine the ground pork with dried sage, salt, and pepper. Add the cooled vegetable mixture and mix until evenly distributed.

5. Shape the mixture into patties about 1 inch thick.

6. Heat the remaining tablespoon of ghee in the skillet and fry the patties 2–4 minutes per side, until browned. Transfer the patties to a baking sheet and finish cooking in the preheated oven for about 7 minutes.

These patties freeze well — portion them into bags (I freeze three per bag) and pull them out the night before you want to eat them. Enjoy!

  • 1/2 cup shredded carrots
  • 1 cooked sweet potato
  • 1 pound ground pork
  • 1/2 t dried sage
  • 1/4 t Himalayan salt
  • 1/4 t pepper

Instructions

  • Preheat oven to 350°F. Heat 1 tablespoon ghee in a skillet, add onion, garlic, and carrots; cook until the onion is translucent and the carrots soften. Add cooked sweet potato and spinach, mash the sweet potato into the mixture and stir until the spinach wilts. In a bowl combine ground pork, sage, salt, and pepper. Mix in the vegetables and shape into patties about 1 inch thick. Fry patties 2–4 minutes per side until browned, then transfer to a baking sheet and bake 7 minutes. Serve or freeze for later.
