Who’s excited for the weekend? It’s hot here in Spokane, and we’re planning sprinklers, the splash pad and at least one day on the river.
Planning dinners for the week saves a surprising amount of mental energy. When I don’t have a plan, I worry about what to make, discover I’m missing ingredients, make extra grocery runs and end up spending more time and money than I wanted. Meal planning fixes all that.
Keep it simple: pick five dinners, write a concise grocery list, shop once and cook through the week with everything on hand. It’s that easy.

Here’s What to Eat This Week
MONDAY – Spicy Potato Soft Tacos
Ease into the week with these incredibly easy and flavorful tacos. They come together fast and are great for a low-effort, high-satisfaction Monday night.
TUESDAY – Garlic Sweet Chili Shrimp and Green Beans
Sweet, savory and garlicky with a touch of creaminess — this shrimp dish is one of my favorites. It pairs perfectly with steamed rice or noodles for a quick weeknight meal.

Pasta tossed with sun-dried tomatoes, broccoli, garlic and flavorful Italian sausage. Simple, comforting and exactly what you want on hump day.
THURSDAY – Miso Butter Salmon and Rice
The miso butter on this salmon is incredible — savory, slightly sweet and silky. Miso is usually in the international aisle or at an Asian market. Serve with rice and quick sautéed vegetables for an elegant weeknight dinner.
FRIDAY – Roasted Veggie Power Bowls
Perfect for the end of the week — roast whatever vegetables and proteins you have, pile them into bowls with grains or greens, and finish with your favorite sauce or dressing. It’s a great way to clean out the fridge and end the week on a healthy note.
