Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking using the Char-Broil Smoker-Roaster Grill, cook with the lid open and the temperature set to High. You may need to adjust the cooking time.
I love bacon-wrapped jalapeño poppers, and I’ve made them a lot. But not everyone wants a spicy appetizer, so these sausage-stuffed peppers on the Char-Broil Big Easy are a great alternative. The peppers develop a slight char and sweetness, the sausages add smokiness and a pleasant pop when you bite into them, the cream cheese brings a smooth creaminess, and the bacon ties everything together with crisp, savory flavor. A light sprinkle of your favorite rub finishes them off perfectly.

Use Your Favorite Rub Or Seasoning
I used the same rub I used for my root beer can chicken on these sausage-stuffed peppers. It adds a touch of smokiness, a bit of garlic, and a very mild heat—enough to add interest without overwhelming guests who prefer milder flavors. You can use any rub or seasoning you like; I recommend one with a subtle smoky note to enhance the grilled character.

Sausage-Stuffed Peppers on the Char-Broil Big Easy

Ingredients
- 10 mini sweet peppers preferably all about the same size
- 4 ounces cream cheese softened
- 10 cocktail sausages (such as Lit’l Smokies)
- 5 pieces bacon cut in half lengthwise
- Your favorite BBQ rub optional
Instructions

Preheat your Big Easy according to the manufacturer’s guidelines.

Slice each pepper in half lengthwise and remove seeds and membranes.

Spoon or divide the softened cream cheese among the pepper halves.

Place a cocktail sausage into each pepper half and press gently so it fits snugly.

Wrap each stuffed pepper with a strip of bacon and lightly sprinkle with your rub if using.

Arrange the peppers in the Big Easy basket and a bunk bed basket if you have one. Cook for 20–25 minutes, or until the bacon is crisp and peppers have softened.

Allow them to cool slightly before serving.
