The impossible pie from my childhood was a big influence, so I set out to make a keto-friendly bacon cheeseburger pie that captured that memory using Carbquik as a low-carb substitute for Bisquick.
Is Carbquik the Same as Bisquick?
The result was delicious, but it didn’t turn into the exact “impossible pie” texture I was imagining. Rather than a traditional pie, it was more like a bacon cheeseburger casserole baked in a pie dish—and I’m perfectly okay with that. Carbquik adds fiber and bulk, which helps the dish feel more substantial and keeps you full, something many people on keto appreciate.
If your goal is a hearty, satisfying casserole-like pie, this version works well.
Was adding Carbquik a good idea? Yes—I’d use it again. It thickened the batter and tempered the strong egg flavor that can come through in crustless pies. It didn’t create a flaky crust like a traditional pie, but it provided helpful fiber. Many people on keto find they need extra fiber, and Carbquik supplies that benefit.
Look for No-Sugar Bacon
One important keto tip: check bacon labels. Some brands add sugar, which can sneak carbs into your meals. We use Appleton Farms bacon because it contains no sugar. Once you commit to removing sugar, scanning labels for hidden sugars becomes second nature.
The finished dish looks as good as it tastes, though don’t expect a pastry crust. If you prefer a true crust, you can bake this filling in a keto pie crust next time for a more traditional presentation.

Ingredients
- 1 lb ground beef
- 3 large eggs
- 1 tsp salt
- 1/2 cup Carbquik mix
- 8 strips of cooked bacon
- 1 1/2 cup shredded cheddar cheese
- 1 cup milk
- 1 medium onion, chopped (optional)
Instructions
- Preheat oven to 350 degrees.
- Spray a pie plate with non-stick spray.
- Brown the ground beef over medium heat and drain excess fat.
- In a medium bowl, beat the eggs, then add the cooked ground beef and mix.
- Stir in Carbquik, salt, 3/4 cup cheddar cheese, crumbled bacon, milk, and onion until well combined.
- Pour the mixture into the prepared pie plate and sprinkle the remaining cheese on top.
- Bake for 20–25 minutes, or until set and golden. Let rest briefly before slicing.
