Creamy Stout-Caramel Milkshakes: Rich Adult Dessert Shakes

You don’t have to travel to Ireland to enjoy these malty Stout Caramel Milkshakes. The clean, malty notes of stout paired with caramel ice cream make for rich, satisfying milkshakes. Finish each glass with a generous swirl of fresh whipped cream for the perfect touch.

If your game-day spread already includes great snacks and cocktails, consider adding a boozy milkshake to the lineup. These stout-based milkshakes are playful, easy to make, and always a hit.

There’s nothing like a room full of cheering fans on Super Bowl Sunday. It’s the ideal occasion for hearty appetizers, snacks, and fun drinks. I wanted something a little boozy but still light and festive—milkshakes and beer seemed like a natural pairing.

What type of beer?

My pick was Guinness, specifically an extra-stout I had on hand. Extra-stout will deliver a bolder, more robust beer flavor, so if you prefer something milder on your first try, start with regular stout or a blonde ale. Taste preferences vary, so choose a beer that matches how pronounced you want the stout notes to be.

Guinness is an Irish dry stout brewed from barley, hops, and malt, with carbonation that combines carbon dioxide and nitrogen for a smooth, creamy texture. That creamy character blends beautifully with ice cream to create a silky milkshake.

What’s in Guinness Extra Stout

Guinness Extra Stout is brewed from Irish barley, hops, and malt. The unique carbonation—part carbon dioxide and part nitrogen—gives the beer its thick, velvety head and small bubbles, which help create a light, frothy milkshake when mixed with ice cream.

What flavor ice cream to use?

I used caramel ice cream to complement the beer’s subtle caramel notes. Combining the caramel ice cream and stout produces a smooth, creamy shake with a hint of malty depth. You can see the tiny bubbles from the beer’s carbonation—those help keep the shake light and airy even with the rich ice cream.

Whipped Cream!

Top each milkshake with a large dollop of freshly whipped cream. The cream softens and balances the stout’s bold flavors and adds a classic milkshake finish.

Instructions

  1. Whip the heavy whipping cream with an electric mixer until stiff. Chill while you prepare the milkshakes.
  2. Add caramel ice cream and the stout (or beer of your choice) to a blender and pulse just a few seconds until combined—avoid over-blending to keep the texture light.
  3. Pour the milkshakes into tall glasses and top each with a large dollop of whipped cream.
  4. Serve immediately for best texture and flavor.
  5. Optionally, dust the whipped cream with malt powder before serving.

Notes

  • Choose the beer to match how prominent you want the stout flavor. Extra-stout gives a strong, roasted malt character; regular stout or a lighter blonde ale will produce a subtler beer presence. Adjust to your taste.
