This cake is so rich it could easily be called a chocolate mug brownie. Its flavor is reminiscent of unbaked brownie batter—soft, dense, and spoonable.
You can make the base using either ground nuts or almond flour. Below are three variations that work well: almonds, pecans, or almond flour. Other nuts (walnuts, cashews) may also work but will change the flavor and texture.
For a keto version, choose a keto-friendly sweetener such as erythritol or xylitol and, if you add chocolate chips, use a sugar-free variety. I sometimes use regular chocolate chips and let them melt on top—because sometimes good decisions are optional.

Ingredients
- 1/3 cup almonds or pecans, or 6 tbsp almond flour (nut-free option available)
- 1 tbsp + 2 tsp cocoa powder
- 1 tbsp granulated erythritol or sugar or sweetener of choice
- pinch stevia, or optional additional 2 tsp sugar
- 1/8 tsp salt
- 1/4 tsp baking powder
- 3 tbsp milk of choice, or 2 tbsp if using a liquid sweetener
- 1/4 tsp pure vanilla extract
- Optional: chocolate chips or sugar-free chocolate chips

If using whole almonds, pulse them in a blender or food processor until they resemble a coarse flour. The texture will be slightly chunkier than store-bought almond flour, but both work well.
Grease a small ramekin or mug and combine all ingredients. You can bake at 350°F for about 10 minutes, or microwave. Microwaves vary—start with 30 seconds, then add two 15-second intervals if needed. The cake will seem a bit gooey when hot but firms up as it cools. This dessert is best enjoyed straight from the mug while still warm.
