Weeknight Fettuccine with Sausage and Kale Recipe

Shortening days and early sunsets have a way of changing routines. I find myself drawn to quieter evenings, earlier bedtimes, and simpler comfort food. Summer energizes me in ways autumn and winter do not, but I’ve discovered a soft spot for hearty, warming meals once the light fades earlier. When the weather cools and the evenings are long, nothing beats a plateful of pasta to lift the spirits.

Cold nights practically demand carbohydrates — rich, buttery, satisfying dishes that feel like a hug on a plate. This fettuccine with sausage and kale is the kind of rustic, cozy meal that fits the mood: straightforward to make, generous in flavor, and perfect for sharing. Tender kale wilts into a creamy sauce, while spicy Italian sausage adds depth and warmth. Serve it with a generous shaving of Parmesan for a simple weeknight supper that feels special.

Fettuccine with Sausage & Kale

Ingredients

  • 1 lb fettuccine pasta
  • 1 lb spicy Italian sausage, removed from casings
  • 1/2 cup water
  • 1/2 cup heavy cream
  • 1 large bunch kale, trimmed and chopped
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup shaved or grated Parmesan cheese

Preparation:

Bring a large pot of salted water to a rolling boil. Cook the fettuccine according to the package directions until al dente. Drain and set aside.

While the pasta cooks, heat a large skillet over medium. Add the sausage, breaking it up with a spoon, and cook until no pink remains and it’s nicely browned. Reduce the heat to medium-low, then add the water and heavy cream. Let the mixture simmer until reduced by about half, roughly 7 minutes, stirring occasionally.

Add the chopped kale to the skillet. It will quickly wilt and blend into the sauce—toss to coat and combine with the sausage. Add the drained pasta to the skillet and toss thoroughly so the noodles are evenly coated in the creamy sauce and bits of sausage and kale are distributed throughout. Taste and season with salt and pepper as needed.

Serve portions topped with shaved or grated Parmesan. This dish pairs nicely with a simple green salad and crusty bread to soak up any remaining sauce. Leftovers keep well and can be gently reheated on the stovetop with a splash of water or cream to loosen the sauce.
