Ingredients:

Sautéed vegetable mix

  • 1 teaspoon olive oil
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 jalapeños, seeded and diced for less heat (or keep seeds for extra spice)
  • 1 cup frozen corn
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh cilantro, roughly chopped

Beans

  • 2 (15-oz) cans pinto beans, drained
  • 1/4 cup water
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt, or to taste

Other layers and toppings

  • 1 cup jarred salsa (mild, medium, or hot)
  • 1 cup shredded cheddar cheese
  • 1 ripe avocado, diced
  • 1/2 lime, juiced
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Preheat the oven to 400°F (200°C). Heat a large skillet over medium heat.
  2. Dice the bell pepper, onion, and jalapeños (remove seeds if you prefer less heat). Add the vegetables to the skillet with 1 teaspoon olive oil, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper. Sauté for about 5 minutes, stirring occasionally, until softened and beginning to brown. While the vegetables cook, roughly chop the cilantro. Remove the skillet from heat and stir in the frozen corn and chopped cilantro; set aside.
  3. In an 8-inch oven-safe baking dish, combine the drained pinto beans, 1/4 cup water, 1 tablespoon olive oil, cumin, smoked paprika, garlic powder, and 1/2 teaspoon sea salt. Use a potato masher or fork to mash the beans until mostly smooth but still slightly textured.
  4. Spoon the jarred salsa evenly over the mashed beans. Top the salsa with the sautéed vegetable mixture, spreading it in an even layer. Sprinkle the shredded cheddar cheese over the top.
  5. Bake in the preheated oven for about 15 minutes, or until the cheese is melted and the dip is bubbling at the edges. If you assembled the dip ahead of time from the fridge, add 5–7 extra minutes to ensure it heats through.
  6. Remove from the oven and immediately top with diced avocado, a squeeze of lime juice, and the remaining chopped cilantro. Serve hot with plenty of tortilla chips for dipping.

Notes: This recipe can be assembled up to 5 days in advance. Cover and refrigerate until ready to bake; increase the oven time by a few minutes when reheating so the dip is warmed through and bubbling.

Make it vegan: Substitute your favorite shredded vegan cheese for the cheddar to keep it dairy-free while preserving the melty texture and flavor.
