  • 1 ½ cups (355ml) mashed banana (about 3 large ripe bananas)
  • ¾ cup (165g) packed light brown sugar
  • ¼ cup (56g) unsalted butter, melted
  • 2 large eggs, room temperature
  • ¼ cup (60ml) yogurt
  • 1 teaspoon vanilla extract
  • ½ cup (85g) dark chocolate chips

Frosting:

  • ⅓ cup (75g) salted butter, softened (or unsalted + pinch of salt)
  • 2 tablespoons (12g) cocoa powder
  • ½ cup (60g) icing sugar, sifted
  • ½ teaspoon vanilla extract
  • 3½ oz (100g) milk chocolate, melted and cooled

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving a 1-inch overhang for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, place the mashed banana and whisk in the brown sugar until glossy. Whisk in the melted butter, then add the eggs one at a time. Stir in the yogurt and vanilla until smooth.
  4. Add the dry ingredients to the wet mixture and fold until just combined. Fold in the chocolate chips.
  5. Scrape the batter into the prepared pan, smooth the top, and bake 40–45 minutes, or until a skewer inserted in the center comes out clean. Let cool 10 minutes in the pan, then transfer to a wire rack to cool completely.
  6. For the frosting, beat softened butter until smooth. Sift in cocoa powder and icing sugar and beat until pale and fluffy, about 2 minutes. Beat in vanilla, then add half the cooled melted chocolate and mix until creamy. Add the remaining chocolate and beat until the frosting is thick, silky, and spreadable.
