Slow-cooked Crockpot Minestrone Soup is full of bright, comforting flavors built on a rich homemade vegetable broth. With a bit of planning, you can make the broth in advance and turn this into an easy weekend meal with delicious leftovers that reheat well throughout the week.

This recipe works in any season. While it’s a warm, comforting soup, the abundance of fresh vegetables gives it a light, spring-like feel. The one extra step is making the broth ahead of time, but that investment rewards you with much deeper flavor than store-bought broth.

Dumplings, Noodles, and Gnocchis, Oh My!

This recipe uses mini potato dumplings in the photos, a product available in some grocery frozen sections. There are several good swaps you can use based on what you can find: mini potato gnocchi, fresh gnocchi, or frozen egg noodles/dumplings work well.

If you use fresh or frozen dumplings or gnocchi, they do not need to be pre-cooked before adding to the soup. If you choose dried pasta, partially boiling it first is a good idea to prevent gummy texture after long simmering.

Don’t Ask Me About My Slow Cooker

Not all slow cookers behave the same. Some modern units with metal inserts run hotter and can essentially boil rather than gently simmer. If your machine runs hot, reduce the cook time or temperature accordingly.

If your slow cooker lacks a sauté function, sauté the vegetables in a skillet first to develop flavor, then transfer them to the slow cooker before proceeding.

Make This In Your Instant Pot

You can adapt the recipe for an Instant Pot or for stovetop cooking. Adjust times and settings to match your appliance: use the sauté setting to brown vegetables and then pressure cook for a shorter time, or simmer everything on the stove until vegetables are tender and flavors meld.

For The Love Of Italian Tomatoes

Seasoned Italian-style crushed tomatoes add a lot of the character to this soup, but any good quality canned tomatoes will do. Olive oil, garlic, and oregano (or other Italian herbs) contribute essential savory notes.

To deepen the broth, I often use a concentrated paste or base like a vegetable bouillon—this adds rounded, savory depth. Use the seasoned base sparingly and taste as you go to avoid oversalting.

Crockpot Minestrone Soup

Slow-cooked minestrone soup bursting with flavors, crafted with a hearty homemade vegetable broth. With just a little planning ahead, you will have a great weekend meal with leftovers throughout the week.

Ingredients

  • For the Broth
  • 6 to 8 cups mixed vegetables, rough chopped (onions, carrots, celery, kale, tomato, spinach, red peppers, zucchini, etc.)
  • 3 tablespoons butter or oil of your choice
  • 8 cups water
  • 2 tablespoons vegetable bouillon paste or base
  • For the Soup
  • 3 (14.5 oz) cans crushed Italian-seasoned tomatoes
  • 2 cloves garlic, crushed
  • 1 (14 oz) can beans (chickpeas suggested), drained and rinsed
  • 2 cups carrots, diced
  • 2 cups potatoes, diced
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • Fresh herb of your choice (lemon thyme shown)
  • 1 bag frozen mini potato dumplings, gnocchi, or frozen dumplings/noodles
  • Parmesan cheese for garnish

Instructions

  1. Set your crockpot to the sauté setting and add oil or butter. If your slow cooker has no sauté function, sauté the vegetables in a skillet first.
  2. Add the 6 to 8 cups of rough-chopped vegetables to the cooker.
  3. Allow the vegetables to roast in the crock, stirring occasionally, until fragrant and beginning to brown.
  4. Switch the slow cooker to low and set for 10 hours.
  5. Add 8 cups of water and the vegetable bouillon paste to the cooker.
  6. Cook for at least 10 hours; longer extraction yields a deeper, richer broth.
  7. At the end of the cook, strain the solids through a fine mesh strainer into a large bowl. The resulting broth should be deeply flavored and brownish in color. You can freeze this broth in portions for later use.

To Make the Soup with the Homemade Broth

  1. Return the strained broth to the slow cooker. Add carrots, potatoes, green beans, beans, canned tomatoes, garlic, and corn. Taste and adjust salt and pepper; add an extra tablespoon of bouillon if you want more depth.
  2. Cook the soup on low for about 8 hours so the vegetables soften and flavors meld.
  3. About one hour before serving (at the 7-hour mark), add the mini dumplings or gnocchi and fresh herb. If using canned beans, be sure they are drained and rinsed before adding.
  4. Ladle into bowls and finish with freshly grated Parmesan and cracked black pepper.
